Asaparagus with Bacon and Cheese
Got an asparagus hater? Try this one. The bacon and cheese sauce will win anyone over. Also good on brocoli.
INGREDIENTS:
1 1/2 lbs fresh asparagus
2 tbs butter
2 tbs flour
1 cup milk
1/4 tsp salt
1 cup shredded American or mild Cheddar cheese
6 slices bacon

DIRECTIONS:
1. Cook bacon, drain, and crumble into bits.
2. Clean asparagus, trim off ends and lightly stream until crisp-tender. Remove to serving dish and keep warm.
3. Melt butter in saucepan, then stir in flour until smooth and bubbly.
4. Gradually add milk and cook, stirring constantly, until thickened.
5. Add salt and cheese to saucepan and stir until cheese is melted.
6. Pour sauce over hot drained asparagus then sprinkle with crumbled bacon. Serve hot.
