Loaded Brickle Cookies

This is just about the best cookie in the whole wide world. If you’re a big fan of cookies that are full of chewy chips and crunchy nutty goodness–you have to try these. Truth be told, I’m a fan of anything that has white chocolate chips in them.

Another secret that I use is that when I’m short on time, I simply spread cookies out in a couple of large pie plates and cook them that way. They do come out slightly more gooey–but can you really complain about gooey when you’re talking about cookies? This way too, you can serve it easily as a ‘piece of pie’ a la mode complete with vanilla ice cream.

You will need:

1 1/2cups of old fashioned oats. . .processed into a powder via the food processor

2 1/2 cups flour

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 cup butter

1 cup packed brown sugar

1/2 cup sugar

3 tablespoons shortening

2 eggs

1 tsp vanilla extract

1 1/2 cups chopped walnuts

3/4 cup white chocolate chips

3/4 cup milk chocolate chips

3/4 cup toffee bits

Step 1: Heat oven to 350 degrees F. Whisk together ground oats, flour, baking powder, baking soda, and salt in a medium bowl.

Step 2: Beat butter, brown sugar, sugar and shortening in large bowl at medium speed until well blended.

Step 3: Beat in the eggs and vanilla until well blended.

Step 4: Add the flour mixture to the batter. Stir in the walnuts, white chocolate chips, milk chocolate chips, and toffee bits.

Step 5: Scoop batter into 1 inch balls and place on parchment lined baking sheets. Flatten cookies with the bottom of a glass. Bake for 10 to 12 minutes until golden brown. (Note: Taking cookies out a little early will yield softer results. Also, store the cookies in an air tight container with a slice of bread. This will keep them soft for up to a few weeks.)
