Special After School Treat—Chocolate Pizza

You survived the send off and now you only have a few more hours before the first day of the new school year ends. That’s more than enough time to whip up these special treats.

Growing up my mom would always have a tasty homemade treat waiting for us when we got home from the first day of school. My brothers and I would join my mom at the kitchen counter; chow down on our ooey-gooey goodies and share details of our first day back at “prison” (my youngest brother’s nickname for school).

If you want to welcome your children home with a bang consider whipping up the following recipes for chocolate pizza. They are simple to prepare and are sure to bring a smile to your student’s face.

CLASSIC CHOCOLATE PIZZA

Ingredients:

3 oz. refrigerated chocolate chip cookie dough

12 oz. semisweet chocolate chips

4 oz. walnuts

1 can coconut pecan frosting

Directions:

Preheat oven to 350 degrees.

Grease pizza pan.

Press cookie dough evenly around the pan. Bake 12-15 minutes.

Remove the pan from oven, place about 2/3rds of the chocolate chips evenly on the dough, return to the over for about minute, Remove pan and spread melted chocolate evenly on the dough.

Let cool a bit.

Warm the icing for easy spreading. Spread icing evenly on the top of the melted chocolate, leaving a boarder around the edge.

Sprinkle the rest of the chocolate chips and the walnut pieces on top.

Let cool before cutting.

CHOCOLATE MARSHMALLOW PIZZA

Ingredients:

2 cups (12 oz. package) semi-sweet chocolate chips

1 pound white chocolate baking squares, divided

2 cups Miniature Marshmallows

1 cup Rice Krispie cereal

1 cup peanuts

1/3 cup shredded coconut

1 teaspoon vegetable oil

Directions:

In a medium-size microwave-safe bowl, heat chocolate chips and 14 ounces of the white chocolate on HIGH 2 minutes; stir. Continue microwaving 1 to 2 minutes until smooth.

To melted chocolate add marshmallows, cereal and peanuts. Pour onto greased 12-inch pizza pan. Top with coconut.

Microwave remaining 2 ounces of white chocolate and oil in 1-cup glass measuring cup for about 1 minute; stir. Continue microwaving 30 seconds to 1 minute until smooth. Drizzle over coconut.

Refrigerate until set.
