For me, trying to make exactly the same recipe again is like trying to re-crack an egg. It’s just impossible, because I can’t resist looking for ways to improve and alter it. That’s not a bad thing.
Coming up to Christmas, handmade gifts are always appreciated. They’re good for the elderly and people in nursing homes. They’re good for the hard to buy person or those you simply don’t know well enough to know their taste but want to give a small gift too, people like a child’s teacher or a person who has helped you or done work for you like your hairdresser or plumber etc.
Gluten Free Chocolate Ginger Slice
Ingredients
Base
6 ounces margarine or butter
2/3 cups raw sugar
4 tablespoons gluten free cocoa powder
2 tablespoons coconut
1 beaten egg
8 ounces crushed gluten free ginger biscuits
2 cups rice puffs
Half cup crushed nuts
Chocolate Topping
8 ounces gluten free chocolate buds
2 ounces margarine
Method
Base
Prepare slice tray lined with baking paper. Melt margarine castor sugar and cocoa in a saucepan over a medium heat, stirring all the time to dissolve sugar. Cook for three minutes.
Remove from heat. Add coconut, beaten egg, crushed biscuits, nuts and puffed rice.
Press mixture into prepared slice tin. Chill for an hour before adding topping.
Chocolate Topping
Melt chocolate buds and margarine in a bowl over boiling water. Spread topping evenly over slice. Allow to set in fridge for 20-30 minutes.
Slice into pieces with a sharp knife.
For a Gift
Place a red or green napkin in a basket. Fill the basket with pieces of slice. Wrap with red or green cellophane and tie a contrasting ribbon and gift tag on it and you have a perfect, inexpensive Christmas gift.
HINT
Just remember if you are giving this to a family with small children under 5, to let them know it contains nuts or make sure no-one has a peanut allergy. If they do, simply replace the nuts with more crushed biscuits or rice puffs.
