A Sweet Treat and a Hint for the Gluten Free

When visitors are around, it’s good to have a sweet treats that don’t take a long time to make. This one will only take about 15 minute preparation time, though it does take 30 minutes to cook

Caramel Ginger Slice (Yes, it is gluten free!)

Ingredients

1 and a half cups gluten free flour

Half teaspoon G F baking powder

4 ounces margarine

Another 2 ounces of margarine

Half cup brown sugar

Half cup maple syrup

2 teaspoons ground ginger

Half teaspoon mixed spice

1 can 99% fat free condensed milk

500 grams dark cooking chocolate, melted

Preheat oven to 320 degrees. Grease and flour a slice pan.

Mix together in a bowl, G F flour, 4 ounces melted margarine, sugar, half the maple syrup, mixed spice and ginger.

Press this mixture into the prepared slice pan. Bake for 15 minutes or until lightly browned. Do not overcook. Allow to cool.

Combine 2 ounces margarine. Condensed milk and maple syrup in a saucepan. Stir constantly over a low heat till smooth. When smooth, pour this over the prepared base.

Bake for 15 minutes till golden. Allow to cool.
Spread melted cooking chocolate over slice. Put in the fridge till set.

Cut into slices when cool. This recipe should make about 24 pieces. My guess is once visitors and family taste it, it will disappear fast, so maybe consider making two. There should be reason why it won’t freeze, if you do manage to keep one away from the hungry horses.

HINT FOR THE GLUTEN FREE

Just a hint for those on a gluten free diet. Be careful around this festive time that you check labels carefully. Most chocolates that have a filling of some sort, contain glucose syrup. Unless it definitely states that it is made from corn, glucose syrup is invariably made from wheat. The same applies to most candies and sweets. So learn to read labels carefully. Also many herbs and spices when they are dried contain wheat so please check.
