A very nice accompaniment to a pork or chicken recipe.
INGREDIENTS:
1 cup brown rice
1/4 cup raisins
2 tbs dehydrated chopped onion
1 tbs butter
2 cubes chicken stock
2 cups water
1/3 cup slivered toasted almonds
1 pinch salt
1 pinch freshly ground black pepper
DIRECTIONS:
1. Place the rice, raisins, onion, butter, stock cubes and water in a large saucepan.
2. Bring to the boil, and stir once or twice.
3. Reduce heat, cover, and simmer 45 to 50 minutes, or until rice is tender and liquid is absorbed.
4. Remove from heat. Add almonds, season with salt and pepper, and fluff with a fork.
Prep: 2 minutes
Cook: 50 minutes
