Antipasto Salad

Today, my son and I were out exploring the neighboring towns. I like Jacksonville, but there are some things I miss about not living in a larger town. There is a grocery store in Memphis called Schnucks that has specialized food items like Wolfgang Puck’s soups and many different types of ethnic foods that most grocery stores do not have. That is, at least the grocery stores in Jacksonville do not have them. Today, we ventured up towards Swansboro, a beach town on the eastern coast here in North Carolina. I needed some ground coriander because I was going to make the falafel recipe this week.

I looked at three different grocery stores here and didn’t find it, so I thought I would give Lowes Foods in Swansboro a try. I am so glad I did! It was just like Schnucks – I loved it! I found the ground coriander that I needed, plus many different specialty items (including Wolfgang Puck’s soups), but more importantly, I found that they had antipasto salad in their deli. I bought some, but at $5.99 a pound and 20 miles away, I decided maybe I should find a recipe online and try to make it myself. Here’s hoping it is as good as the salad from Lowes deli!

For this recipe, you will need salad olives, ripe Greek olives, grated Romano cheese, Swiss cheese, imported salami, sweet pickles, celery, 10-15 cherry tomatoes, and olive oil.

You will need to chop 12 slices of salami, 3 slices of Swiss cheese, and two ribs of celery very finely. Chop enough sweet pickles to make 6 ounces. Cut 10-15 cherry tomatoes in half. Combine that in a medium sized bowl with 1 pint of salad olives, one jar of ripe Greek olives, 3 ounces of grated Romano cheese, 6 ounces of chopped sweet pickles, and the cherry tomatoes. Add 2 tablespoons of olive oil and toss well. Cover and put in the refrigerator and let it marinate for 12 hours for the best results.
