Appalachian Bean Loaf

Appalachian Bean Loaf
Perfect when you have at least one vegetarian in the house and you need a meal that is filling but pleases everyone.

INGREDIENTS:
2 cup beans, mashed
2 cup soft bread crumbs
2 large eggs, beaten
1 tbs butter
1/4 tsp pepper
1 tbs milk
1 pinch salt
2 tbs onion, chopped

DIRECTIONS:
1. Combine all ingredients using enough milk to moisten. Pack firmly into well buttered loaf pan.
2. Bake at 350F for 1 hour or until firm. Serve with tomato sauce.

Prep: 5 minutes
Cook: 60 minutes
Serves: 4
