Asian Chicken Salad

This blog title could be equally appropriate as “What to do with your leftover roasted chicken. . .” However, that’s too long, and well, making an Asian Chicken Salad is what you can do with your leftover roasted chicken!

My husband even likes this salad because it seems to have a little of everything. It’s a little sweet, a little sour, and a little crunchy. What’s best is that it won’t wreck your diet. If you like Asian flavors–you have to try this!

You will need:

2 tablespoons brown sugar

2 teaspoons soy sauce

1 tablespoon sesame oil (optional)

1/4 cup vegetable oil

3 tablespoons rice vinegar

1 can of chow mein noodles or crunchy rice noodles

1 small can of mandarin oranges

1 head iceberg lettuce – rinsed, dried, and chopped

1 full cup of leftover chicken, shredded

3 green onions, chopped

1 tablespoon sesame seeds, toasted

Directions:

Toast the sesame seeds by spreading them on a cookie sheet and putting them an oven at 300 for 5 minutes. Toasting the seeds brings out a fuller flavor.

Prepare the dressing 30 minutes ahead of time by combining the brown sugar, soy sauce, sesame oil, salad oil, and rice vinegar in a salad dressing carafe. Shake the ingredients together. I also like to add some of the juice from the mandarin oranges. . .but experiment carefully. You don’t want your dressing to come out with too strong of an orange flavor. I suggest experiment with about a teaspoon at a time of orange juice.

In a large bowl combine the iceberg lettuce, cooked and shredded chicken, green onions, mandarin oranges and toasted sesame seeds. Let chill about 10 minutes. Top with chow mein noodles. Serve in salad bowls and offer the dressing in a pourable container so your family can add as much dressing as they want. You can also pour the dressing over the top of the salad, toss, and serve immediately.
