Asparagus with Citrus Dressing

Asparagus with Citrus Dressing
You can never have too many ways to cook asparagus.

INGREDIENTS:
1 lb fresh asparagus spears, trimmed
3 tbs orange juice
2 tbs lime juice
1 tsp Dijon mustard
2 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1/3 cup vegetable oil
2 large hard-cooked egg yolks, finely chopped

DIRECTIONS:
1. In a large skillet, bring 2″ of water to a boil over high heat. Add the asparagus.
2. Cook uncovered for 3-5 minutes or until desired tenderness is reached.
3. Combine the orange juice, lime juice, mustard, sugar, salt, and pepper in a jar with a sealable lid.
4. Shake well. Add oil. Shake well again.
5. Pour over warm asparagus. Sprinkle with egg yolk.

Prep: 5 minutes
Cook: 10 minutes
Serves: 4
