Avocado Gazpacho

Avocado Gazpacho
Gazpacho is a cold, Spanish tomato-based soup. This version is based on Avocados and makes a beautiful presentation.

INGREDIENTS:
1 large Cucumber, peeled, seeded, chopped
2 cloves Garlic, quartered
2 large Shallots, quartered
1 large Green bell pepper, seeded, roughly chopped
1 cup Torn lettuce
1 tbs Chopped fresh dill
1 tsp Chopped fresh dill
1 tbs Red wine vinegar
1 cup Chicken stock
1 large Avocado
1/2 large Lemon, juice of
2 tbs Vodka
1 pinch Salt and Ground white pepper

DIRECTIONS:
1. Place the cucumber, garlic, shallots, green pepper, lettuce, 1 tbs dill, vinegar and chicken stock in the container of a blender or food processor. Blend until smooth.
2. Cut the avocado in half lengthwise. Peel and remove the pit.
3. Roughly chop half the avocado and add it to the mixture in the blender or processor. Blend until smooth.
4. Transfer to a medium bowl. Finely chop the remaining avocado and sprinkle with the lemon juice.
5. Stir this into the gazpacho; add the vodka, salt and white pepper to taste.
6. Stir gently and chill thoroughly before serving. Garnish with remaining chopped dill.
