Avocados With Roquefort

Avocados With Roquefort
These make a great starter to a small dinner party.

INGREDIENTS:
2 1/2 oz roquefort cheese
1 tbs minced fresh parsley
3 tbs olive oil
3 tbs fresh lemon juice
1 dash salt
1 dash freshly ground white pepper
2 large avocados

DIRECTIONS:
1. Mash cheese with parsley into coarse paste in medium bowl with fork.
2. Whisk olive oil and 2 tbs of the lemon juice in small bowl; stir into cheese mixture.
3. Season to taste with salt and pepper. Cut avocados lengthwise in half; remove pits.
4. Scoop two thirds of the flesh out of each avocado half, leaving a thin shell, and add to cheese mixture.
5. Mix well. Taste and adjust seasoning.
6. Sprinkle insides of avocado shells with remaining lemon juice. Spoon cheese mixture into avocado shells, dividing evenly.
