Baked Curried Fruit

Baked Curried Fruit
A sweet and spicy fruit side dish that goes great with ham. Can be served hot or cold.

INGREDIENTS:
1 jar red cherries
1 can pineapple chunks
2 cans apricot halves
1 can sliced peaches
1 can sliced pears
3/4 cup sugar
1 tsp curry powder
1/4 cup butter
3 tbs cornstarch
1/8 tsp salt
1 cup apricot juice

DIRECTIONS:
1. Drain all fruits. Save juice from apricots. Arrange fruits in long, shallow dish.
2. Mix remaining ingredients in saucepan. Cook until thickened, stirring constantly. Pour sauce over fruit.
3. Bake 20-25 minutes at 350 degrees.

Prep: 5 minutes
Cook: 30 minutes
Serves: 8
