Baked Ham with Orange-Raisin Sauce

Baked Ham with Orange-Raisin Sauce
Fabulous for Easter dinner.

INGREDIENTS:
15 lb ham
12 Whole cloves
2 Tbs all-purpose flour
1 cup brown sugar
3 Tbs Dijon-style mustard
1/4 cup cider or malt vinegar
2 cups water
1 cup sugar
1 tsp salt
2 Tbs all-purpose flour
2 large oranges, seeds removed and coarsely grated, with juices reserved
3 Tbs cider or malt vinegar
1 Tbs ground cinnamon
1 cup raisins
2 Tbs butter

DIRECTIONS:
1. Wash and soak the ham for 1 hour in hot water. Place in a large roasting pan, skin side down.
2. Place in cold oven and turn oven on to 325F. Cook, allowing 20 to 25 minutes per lb.
3. Before the last hour of cooking, remove skin and excess fat. Score and stick whole cloves in ham.
4. Brush with 2 tbs flour, mustard and vinegar. Return to oven and bake 1 hour.
5. Meanwhile, prepare the sauce. Combine the water, sugar, salt, and flour in a saucepan over moderate heat, stirring constantly until mixture boils and becomes clear.
6. Add the grated oranges along with the reserved juice to the saucepan. Add the vinegar, cinnamon, raisins, and butter.
7. Simmer covered for 20 minutes. Serve with ham.
