Basil Vinaigrette Dressing
Wonderful drizzled over a tomato, cucumber and mozzarella salad.
INGREDIENTS:
1/4 cup red wine vinegar
2 tbs granulated sugar
1/2 cup fresh basil leaves
2 medium shallots
2 cloves garlic
1/4 tsp fresh ground pepper
1/4 tsp salt
3/4 cup vegetable oil
DIRECTIONS:
1. In a blender or food processor, combine all ingredients except the oil, and blend until smooth.
2. With the machine running, add the oil in a slow steady stream until incorporated.
