Beef Chile Stew

Beef Chile Stew
Similiar to chili, but much better! Serve with a dallop of sour cream.

INGREDIENTS:
2 lbs stewing beef, cut into 1-inch cubes
1 large onion, chopped
6 garlic cloves, finely minced
28 oz canned tomatoes, diced
2 cans whole mild green chilies, chopped
1/2 tsp oregano leaves
1 tsp salt, or to taste
1 dash freshly ground black pepper to taste
1 package Flour tortillas, warmed

DIRECTIONS:
1. In a large saucepan brown beef cubes on all sides.
2. Add onion and garlic and cook until onion has softened.
3. Add remaining ingredients, bring to a boil and reduce heat. Cover and simmer for 2 to 3 hours, or until beef is fork tender and the sauce has thickened.
4. Serve with warm flour tortillas.

Prep: 15 minutes
Cook: 180 minutes
Serves: 6
