Budget Recipes – Breakfast for Dinner

Most of the types of meals that people typically make for breakfast include ingredients that are less expensive than the foods that you would include in a meal made for dinner. If you pay attention to what is on sale at the grocery store, you can make meals that fit within your budget.

There are some people who would say that breakfast is their absolute favorite meal of the day. They like the types of foods that are served for breakfast, and the smells of those foods. These people might be “morning people” who enjoy waking up very early in the morning, and getting ready for their day.

Unfortunately, most people, even those who really love breakfast foods, don’t usually have many opportunities to sit down, relax, and enjoy their meal at breakfast time. Many families start their day in a frantic rush, as they try and get everyone ready for school, and out the door on time. Tonight, you could try out the Budget Recipe “Breakfast for Dinner”. Give your family a chance to really enjoy breakfast foods for a change!

The current sales at Albertsons are effective through Tuesday, October 11, 2011. Hass avocados are $0.69 each. Farmer John Bacon, (12 to 16 ounce varieties), are on sale for $5.49 a package. Sargento Shredded Cheese (16 ounce packages) are $4.99. Home Pride bread, or Wonder Bread, (20 ounce size), are $2.49. Minute Maid Pure Squeezed orange juice (59 fl.oz.) are 2 for $6.00 this week.

Martha Stewart has several interesting recipes that can be used for “Breakfast for Dinner”. I picked out one that looked tasty, and easy to make, and I modified it a little. The original recipe is called “Scrambled Eggs with Bacon and Avocado”.

You Will Need:

Two large eggs

Two slices of bacon

One quarter of a cup of avocado (diced)

Two pieces of toast

Salt and pepper (to taste)

Shredded cheese (of whatever kind you like)

Some butter and milk

Orange Juice (to drink)

Note: These measurements are for one, individual, serving

What You Will Need to Do:

Step One: Fry the bacon in a small skillet. When it is done, remove the bacon and set it aside. Drain all but one teaspoon of fat from the skillet.

Step Two: Scramble the eggs. Add in some salt and pepper (to taste). You may want to add some milk to the eggs. Use the same skillet that you used to fry the bacon. Add as much shredded cheese as you like.

Step Three: When the eggs are scrambled, put them on a plate. Crumble the bacon over the top. Sprinkle the eggs with some fresh avocado. Serve it to your family with toast that has been buttered. Serve this meal with some orange juice to wash it down with.
