Budget Recipes – Pork Stuffed Peppers

peppers Not everything you would want to serve your family for dinner is going to fit within the limits of your budget. Sometimes, though, you can get lucky. If you pay attention to the weekly sales paper at your local grocery store, then you just might be able to serve an “expensive” meal for a small amount of money.

Today, I was looking at the weekly sales paper for Ralphs grocery store. The types of foods that are on sale right now basically screamed out the perfect solution about what to make for dinner. This one might take a little more preparation work than some of the other Budget Recipes, so you may want to try this one on a night that isn’t as crazy busy as some school nights are at your house.

Right now at Ralphs, green peppers are 10 for $10.00. Ralphs is having a 50% off sale on pork. This includes pork chops, pork roasts, and pork ribs. Red Tomatoes on the Vine are $0.99 a pound. Select varieties of Ralphs brand cheese is $3.49 for a package of 12 to 16 ounces. (This includes bars of cheese, and shredded cheese).

I found a recipe from Cooks.com for “Savory Pork Stuffed Peppers”. With so many of the ingredients on sale, now is the perfect time to make this dish for dinner! I would alter the original recipe just a little bit, in order to take advantage of these ingredients.

You Will Need:

One pork chop for every member of your family

One large green pepper for every member of your family

One teaspoon of salt (or to taste)

A small amount of ground black pepper (to taste)

One seven ounce can of whole kernel corn (drained)

One medium onion

Tomatoes (cut into wedges)

Parmesan cheese

What You Will Need To Do:

Step One: Wash the green peppers. Place the pepper on its side. Cut a slice out of the pepper, lengthwise, leaving the majority of the pepper intact. Remove the seeds and membrane from inside the pepper. Do this for each pepper that will be served.

Step Two: Cook the peppers in boiling water for two minutes. When done, remove them from the water, and place them onto a roasting pan.

Step Three: Chop the onion into fine pieces. Put the pieces into a skillet. These are to add a little bit of flavor to the pork chops as they cook.

Step Four: Cook the pork chops in the skillet. After they are done, remove them from the skillet, and cut them into small, bite sized pieces. Place in a mixing bowl.

Step Five: Mix the pork with the amount of salt and pepper that you like. Add the (drained) can of corn, and mix everything together.

Step Six: Place a small amount of this mixture into each green pepper. Top it off with a sprinkle or two of parmesan cheese. Bake this for 15 minutes at 350 degrees. When it is done, add a lightly salted tomato wedge on top of each pepper. Serve!
