Camping Food Favorites

We all probably have fond memories of roasting marshmallows and eating S-mores on camping trips (or, if your like my family, S-mores made by roasting marshmallows over the stove burner….), but there are plenty more tasty treats you can easily make over a campfire.

One that I learned from my brother-in-law is my personal favorite. You peel down one section of a banana. Leave the banana in the skin and cut a slice the long ways down the middle. Stuff in some pieces of chocolate (Hershey’s chocolate bars or chocolate chips do the trick). Then roast some marshmallows and stuff those inside the skin with the banana and the chocolate. Let it sit for a few minutes and then dig in with a spoon. He told me it tastes like ice cream. I wouldn’t say that exactly, seeing as it’s warm from the marshmallows, but it is fantastically delicious.

The foil dinner is another great, portable camping food. Most people know slightly different versions of this recipe, but this is my tried-and-true concoction: In the middle of a generous sheet of foil, place peeled and thinly sliced potatoes, thinly sliced carrots, and a few onion slices. Then place about 1/4 cup or so of raw hamburger on top of that. Salt and pepper the hamburger a little bit. Mix a package of Lipton onion soup mix with two cans of cream of mushroom soup. Spoon about 1/4 cup of this mixture over the hamburger. Seal the foil tightly. Place each dinner directly on top of hot coal and let cook about 45 minutes. The cooking time will vary greatly. Make sure the vegetables are tender and the meat is completely cooked through. Be careful of hot steam when you open the packets.

Hot dogs aren’t the only things you can roast on a stick. I like to take vegetables like onions, red peppers, zucchini and other vegetables and roast them in the fire skewered on a hot dog stick. Add a little olive oil and salt, and you’ve got a healthy treat.
