Chocolate Custard Slice

This is, without doubt, my husband’s all time favorite slice. It comes in three layers. Though it looks fiddly, it’s really not. I wouldn’t make it if it was. Mick’s even been known to make it himself.

The advantage is you don’t need the oven to make this slice.

Be warned, you will probably need to make double this recipe because you’ll find it goes quickly, especially if you have a sweet tooth in the house. I’ve not yet met anyone who doesn’t like it.

Yes, once again it’s gluten free.

HINT

Please check all labels carefully if you are gluten free. Many products contain glucose syrup made from wheat and other wheat based additives. Some icing sugars and custard powders will have this unless it specifies that it is gluten free. It needs to be glucose syrup made from corn to be gluten free.

Chocolate Custard Slice

Ingredients

Base

4 ounces melted margarine

2 ounces sugar

1 and a half tablespoon cocoa

1 beaten egg

Vanilla essence

2 cups gluten free coconut biscuits

1 cup coconut

Half cup crushed nuts

Custard Center

2 ounces margarine

2 cups gluten free icing sugar

2 tablespoons gluten free custard powder

2 tablespoons hot water

Topping

2 ounces cooking chocolate

1 ounce margarine

Method

Base

Melt margarine, sugar, cocoa over hot water till sugar dissolves. Add beaten egg and vanilla. Remove from heat. Add crushed biscuits, coconut, crushed or chopped nuts.

Mix well.

Spread evenly over greased slice tin

Chill

Custard Center

Cream margarine, icing sugar and custard powder. Gradually add 2 tablespoons hot water beating all the time. Spread over base mixture.

Return to fridge

Topping

Melt cooking chocolate and margarine. Mix well. Spread quickly on top of custard center.

Chill.

Cut into squares when cold. Watch it disappear.

HINT
This slice also freezes well, if you can actually manage to keep it away from the sweet tooth long enough to get it in the freezer.

Several squares on a plate and wrapped in cellophane and tied with a bow, makes a nice gift. Again if you can keep it away from family long enough to get it out of the house.
