Coffee Cake Cobbler

Meet my new favorite breakfast cake: the coffee cake cobbler. This is a great dish to bring to a pot luck. You are sure to get rave reviews. But what I especially like about this recipe is that you can use any flavors you want making the cake your own unique creation! While it’s not difficult to make, there are several steps and so you want to start early (or even the night before).

You will need:

1 cup of butter, softened

1 cup sugar

2 eggs

3 teaspoons of vanilla

3 cups of flour

1 teaspoon of baking soda

1 teaspoon of baking powder

1/2 teaspoon salt

1 1/4 cups sour cream

1 can (21 ounces) pie filling; any flavor

1 can (15 1/4 ounces) peaches or other type fruit

You will need for the topping:

1 cup packed brown sugar

1 cup flour

1/2 cup quick-cooking oats

1/4 teaspoon ground cinnamon

1/2 cup butter

Glaze (1 cup confectioner’s sugar with 1 to 2 tablespoons of milk)

Directions:

In a large mixing bowl, cream butter and sugar until the mixture is light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking pwder, baking soda and salt; add to creamed mixture alternately with sour cream. Beat until it is just combined.

Pour half of the batter into a greased 13-in. x 9-in. x 2-in baking dish. Combine the pie filling and fruit and pour over batter. Drop the remaining batter by tablespoonfuls over the pie filling.

For the topping, combine the brown sugar, flour, oats and cinnamon in a bowl. Cut butter into mixture until the mixture resembles course crumbs. Sprinkle over batter.

Bake at 350 for 60 to 70 minutes. Once the cake is cooled, drizzle with icing and serve.
