Decadent Chocolate Coconut Marshmallows

Oh boy—this one’s a good one. Who doesn’t love marshmallows in s’mores or Rice Crispy treats? Here’s a recipe that’s homemade and delicious. The marshmallows will melt in your mouth while the crunchy coconut will send your taste buds over the edge.

For this recipe you’ll need:

For 25 squares

2 envelopes unflavored gelatin

1 cup cold water

1 ½ cups granulated sugar

3 Tablespoons light corn syrup

1 package (7 ounces) shredded, sweetened coconut, finely chopped

1 Tablespoon unsweetened cocoa powder

1 large egg white

½ teaspoon pure vanilla extract

To make this recipe:

Sprinkle the gelatin over water and let it stand in a medium saucepan for about 5 minutes, until it has softened.

Heat the gelatin mixture over low heat, stirring constantly just until the gelatin is dissolved. You do not want it to boil. Stir in the sugar until it is dissolved, then stir in the corn syrup and combine. Transfer the mixture to a large bowl and chill for about 15 minutes until it has thickened.

In a bowl, mix together the coconut and the cocoa powder.

Grease a 9-inch square pan with butter and spread 2/3 of the coconut mixture evenly in the pan.

Add the egg white and vanilla to the gelatin mixture. Using an electric mixer, beat the mixture on high until it is thick and creamy. This will take about 5 minutes. Pour the beaten mixture over the coconut layer in the pan and sprinkle with 2/3 cup more of the coconut mixture. Cover the remaining coconut mixture with plastic wrap or foil and set aside.

Chill the candy until it is set, about 2 hours. Cut into 25 squares. Place the remaining coconut mixture on waxed paper or in a dish. Roll the squares in the coconut mixture until they are coated on all sides.
