Easy Saucy Chicken

Recently on the forums people were talking about quick meals with little preparation. Here’s one I think you’ll like. It takes only a little time to prep this meal, and then the oven does the rest.

For this meal you’ll need:

4 boneless, skinless chicken breasts

1 (15 oz) can diced tomatoes with the juice

¼ red onion, diced

1 tsp. salt

1 tsp. dried oregano

1 tsp. dried parsley

1 tsp. allspice

½ tsp. black pepper

Dash of olive oil

To make this dish:

Spray a 13×9-cooking dish with cooking spray. Place the chicken breasts in the dish. Sprinkle on salt, dried oregano, dried parsley, allspice, and black pepper. Add diced tomatoes with the juice and chopped onions. Drizzle olive oil over the dish. Bake uncovered at 375 degrees for 45 minutes or until chicken is cooked through.

This is a nice dish because the sauce cooks right along with the chicken. It’s delicious served with rice or potatoes and a side of your favorite summer vegetables.

**This meal can also quickly become a fast and simple Chicken Parmigiana. Just prepare as directed, and then, after the chicken is nearly cooked, add provolone or mozzarella cheese to the top and allow it to melt and turn bubbly. For authentic Chicken Parmigiana, dredge the chicken in egg then breadcrumbs and sauté prior to placing in the pan. Follow the directions as stated above.

**Mushrooms would be a lovely addition to this meal, as would chopped garlic and fresh herbs.
