Eggs for Breakfast Every Day?

“I hear what you’re saying about protein and I do feel great when I have eggs for breakfast on the weekends but I just don’t have the time to make eggs during the week. Any suggestions?”

Ah, eggs. These are just the most magical protein in my opinion. They are inexpensive, filling, low in calories, tasty and easily prepared.

Did you know that you can prepare eggs in advance and freeze or refrigerate them? Yes, you can!

You can prepare omelets ahead of time and place them in a microwave-safe plastic container so you can just pack them in your lunch box and have breakfast at work. Some great omelet ideas to add variety to your menu follow:

Chopped mushrooms, green bell peppers and onions.

Chopped mushrooms and lowfat cheese.

Green, red and yellow bell peppers and lowfat cheese. Top with salsa for a tasty south of the border treat.

Diced ham, bacon or lowfat sausage. Add lowfat cheese for a particularly satisfying meal that doesn’t feel like dieting at all.

Scrambled eggs also freeze and refrigerate well.
Making a large batch of scrambled eggs and adding a few healthy toppings like those listed above is a quick and easy way to get your eggs to go. Just make a large pot of them and store them in individual serving sized containers that will microwave. You can either take them in a lunchbox or cooler with you or fill a low-carb tortilla with them and eat them on your way out the door. Never underestimate the power of the breakfast burrito!

Hard-boiled eggs are also a great diet food that travels well and is very convenient to eat. You don’t have to worry about wrapping them because the shell makes a great storage container and you also don’t have to worry about finding a place to warm them up. They taste great cold!
