Give Your Valentine Something Special – Chocolate Covered Strawberries!

My husband and I met when I was volunteering for the United Service Organization (USO). The USO offered a big Thanksgiving program to the military every year, which meant us going to the base to speak to the classes about it. After leaving a class, I walked out into the hall to find – absolutely no one! Lost, I strolled around the hall until a cute Marine, noticing I looked lost, asked, “Are you lost?” That cute Marine eventually became my husband but not before we spent three years apart due to his different moving around the country.

Our first Valentine’s Day together, I remember wanting to do something special for him. I made and carried chocolate covered strawberries from Memphis, Tennessee to Pensacola, Florida – a seven-hour drive! Is the love or what? Your shopping list will consist of 6 ounces of semisweet chocolate, 3 ounces of white chocolate, and 1 pound of strawberries (about 20) with stems. Try to get strawberries that are large and firm.

Chop both the semisweet and white chocolate into small pieces. Place each chocolate separately into 2 medium heatproof bowls. Fill two saucepans with a couple of inches of water and bring to a simmer. After you turn off the heat, place a bowl over each saucepan to melt the chocolate. Stir until the chocolate is smooth then remove from the saucepan.

Get out your cookie sheet and line it with parchment or waxed paper. You will place your strawberries on this after you dip them. Hold the strawberry by the stem and dip it into the semisweet chocolate almost up to the stem. Pull it out slowly, letting the excess chocolate drain off. Place the strawberry gently on the paper. Repeat until you have covered all the strawberries. Use a fork to drizzle a little white chocolate on each strawberry. Let the chocolate set on the strawberries about 30 minutes. If needed, place them in the refrigerator to chill.
