Green Onion and Sausage Casserole
You really do need day old bread for this dish. If your grocer doesn’t have it, simply leave a loaf of fresh bread out pre-sliced on the counter overnight. Note that this dish also needs to be refrigerated overnight.

INGREDIENTS:
2 lbs sausage, casings removed
2 cups cubed day old bread
2 cups grated cheddar cheese
10 large eggs, lightly beaten
3 cups whole milk
1 bunch green onions, trimmed and chopped
1 tsp dry mustard
1 tsp salt

DIRECTIONS:
1. Grease 3-quart casserole and set aside.
2. In a skillet over medium heat, crumble sausage and cook until brown. Drain on paper towel.
3. Arrange bread in prepared casserole and sprinkle with cheese.
4. In a large bowl combine sausage, eggs, milk, green onions, mustard and salt. Mix well. Pour over bread and refrigerate overnight.
5. Preheat oven to 350.
6. Bake casserole for 1 hour or until set and golden brown.

Cook: 75 minutes
