Green Tomato Casserole
Makes a different side dish or a great luncheon entree.
INGREDIENTS:
3 cup green tomatoes, sliced
3 large eggs beaten
1/2 cup milk
1/2 cup cottage cheese
1/2 tsp oregano
DIRECTIONS:
1. Brush bottom and sides of a 9-inch pie pan with oil. Arrange tomato slices in pie pan.
2. In separate bowl, whisk together eggs, milk, cottage cheese, and oregano. Slowly pour mixture over tomatoes.
3. Bake at 375 for about 40 minutes.
Prep: 10 minutes
Cook: 40 minutes
Serves: 8
