Healthy Veggie Pasta

Healthy Veggie Pasta
Bright and colorful dish that won’t weigh you down. Only 3 Weight Watchers Points per serving.

INGREDIENTS:
8 oz bow-tie pasta
1 can artichoke hearts, drained and chopped
1 small yellow onion, chopped
1/2 small green bell pepper, coarsely chopped
1/4 cup pitted black olives, sliced
1 tbs olive oil
2 cloves garlic, pressed
1 can tomatoes, diced and undrained with basil, garlic, and oregano
1/2 tsp salt
1/4 cup feta cheese

DIRECTIONS:
1. Cook pasta according to package directions. Drain and keep warm.
2. Heat oil in skillet over medium heat until hot.
3. Press garlic into skillet and stir fry 15 seconds.
4. Add onion and bell pepper. Stir-fry 2-3 minutes or until vegetables are crisp-tender.
5. Add olives, artichokes, tomatoes with juice, and salt. Heat 1-2 minutes, stirring
gently until heated through.
6. Remove from heat. Stir in warm pasta and sprinkle with cheese. Serve immediately.

Cook: 20 minutes
