Herb Butter Pasta
Rich buttery sauce compliments almost any type of pasta!
INGREDIENTS:
1/4 cup butter
2 tbs chopped fresh parsley
2 tbs chopped fresh basil
1 tbs lemon juice
1 medium green onion, chopped
1/2 tsp grated lemon rind
3/4 cup low-fat cottage cheese
1/2 cup grated parmesan
1 lb spinach noodles
1 pinch salt & pepper
1/4 cup grated parmesan cheese to serve
DIRECTIONS:
1. In food processor, process butter, parsley, basil, lemon juice, green onion & lemon rind until smooth.
2. Add cottage cheese & Parmesan. Process just until combined. Transfer to medium bowl. Cook pasta.
3. Drain well. Add sauce & toss well. Season with salt & pepper. Serve with grated Parmesan.
