In honor of Breast Cancer Awareness Month, here are three foods to fight cancer and a recipe to implement tonight.

Salmon

Eating fish twice a week is a healthy step that can help fight cancer if that fish is salmon. Salmon is rich in fish oil and contains omega-3 fatty acids. Research has shown that omega-3 fatty acid lowers the risk of breast cancer. It also is an anti-inflammatory and improves blood flow.

Tomatoes

Another anti-inflammatory food is tomatoes. Tomatoes contain lycopene which helps fight cancer as it is an antioxidant. It is a versatile vegetable that can be used in salads, on burgers, in salsa, sauces, and sundried. With so many varieties of tomatoes you are sure to find one you like.

Broccoli

Broccoli packs a punch against cancer with its antioxidants. Not only broccoli but cauliflower and brussel sprouts also have anti-oxidants that help turn unhealthy estrogens into healthy estrogens. Make a healthy salad and then serve brussel sprouts with dinner and you will be ahead of the game.

Asian Salmon

1/3 cup soy sauce

1/4 cup orange juice concentrate

2 tablespoons vegetable oil

2 tablespoons tomato sauce

1 teaspoon lemon juice

1/2 teaspoon prepared mustard

1 tablespoon green onion, minced

1 clove garlic, minced

1/2 teaspoon minced fresh ginger root

4 salmon steaks (1 inch thick)

1 tablespoon olive oil

Directions:

1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.

2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.

3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.

4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.
