I dread going to Target on Sundays. However, I dread the place even more on Saturdays, which is why I was there today.
Procrastinators were out in full force today scooping up half-price Halloween candy like it was the November 1st. Frankly, I was surprised Target slashed prices on some of its trick-or-treat candy. I thought that’s what post-Halloween sales were for.
Regardless, there is some cheap candy to be hand out there. Still, I didn’t cave. By this time tomorrow my kid will have hauled in her weight in cheap treats and she’ll want something with a little more pizzazz to celebrate All Hallows’ Eve… which is why I plan on making the following holiday-inspired treats:
PUMPKIN PECAN CAKE
Ingredients:
1 (29-ounce) can pumpkin
1 (12-ounce) can of evaporated milk
3 eggs
1 cup sugar
1 teaspoon salt
2 teaspoons pumpkin pie spice
1 box yellow cake mix
1 cup chopped pecans
2 sticks butter, melted
Directions:
Preheat oven to 350 degrees.
Mix first six ingredients and pour into a 9 by 13-inch greased pan.
Sprinkle with cake mix.
Cover with pecans.
Pour melted butter over top and bake for 50 minutes.
Remove from oven and allow to cool for a bit before serving.
BAT CUPCAKES
Ingredients:
1 package chocolate cake mix
1 can chocolate frosting
24 fudge striped cookies
24 Hershey Kisses
Red icing
Directions:
Prepare and bake cake batter according to package directions for cupcakes.
Cool completely.
Set aside 2 tablespoons chocolate frosting.
Frost cupcakes with remaining frosting.
For bat wings, cut cookies in half.
Insert two cookie halves into each cupcake.
Gently press chocolate Kisses into frosting for heads.
Pipe ears with reserved frosting.
Add eyes with red icing.
EDIBLE MONSTER TOES
Ingredients:
12 ounces white candy coating, coarsely chopped
Green food coloring
22 Nutter Butter cookies
11 Black licorice pieces
Directions:
In a microwave safe bowl, or double boiler, melt candy coating; stir until smooth.
Tint green with food coloring.
Dip one cookie into candy coating.
Let excess drip off and place on waxed paper.
Immediately place a piece of black licorice on the cookie for the toenail.
Repeat until all cookies are coated.
Let dry completely before serving.
