Mick’s Mince Loaf

I love it when Mick decides to take to the kitchen and this is another of his specialties. In fact I have never made this recipe at all.

The original recipe used a cob loaf and was not gluten free and we bemoaned the fact for a while that we could no longer have it. Then we thought why can’t we? And why does it have to be a cob loaf anyway? Wouldn’t a gluten free bread loaf work just as well?

In fact we decided it might even work better. Mick decided to try it. He made a loaf shaped multi grain gluten free bread. He used a packet bread mix. The one he uses is Laucke Easy Bakers instant oven bread mix, meals and grains. A one kilogram packet, which is the way it comes in Australia, will make two loaves. He usually makes two loaves at a time and freezes one.

Mick’s Mince Loaf

Ingredients

1 gluten free meal and grain loaf

I ounce margarine

1 large onion diced

16 ounces ground beef

2 tablespoons gluten free gravy powder

1 and a quarter cups water

1 gluten free beef stock cube

Third cup gluten free tomato sauce or ketchup

1 tablespoon chopped parsley

I cup gated tasty cheeses

1 large tomato chopped.

Method

Cutting in around three quarters of an inch from the edge of the loaf of bread, cut a rectangle from the base of the loaf. Remove soft bread from inside and make into crumbs.

Melt margarine in frying pan. Add onion and cook till onion is transparent.

Add ground beef. Stir over heat till browned.

Add gravy powder, stock cube and water and tomato sauce. Stir this over heat till mixture boils and thickens.

Stir in chopped parsley and breadcrumbs.

Place grated cheese and tomato into bread casing. Top with meat mixture and replace oblong of bread. Wrap loaf in aluminum foil.

Place on baking tray right side up and bake in moderate over for 35-40 minutes.

Serve hot with a tossed salad and a glass of wine if that is your fancy. This makes a perfect lunch or casual weekend meal.
