Oatmeal-Raisin Cookies With Orange Zest

I just recently found out that my dad loves oatmeal raisin cookies. Go figure. It made me want to know what other people love, too. What’s your favorite cookie?

Here’s a delicious recipe for oatmeal raisin cookies. The addition of orange zest in these cookies provides a unique citrus flavor that I feel enhances the flavor of the cookies in a good way. You may also substitute lemon zest if you’d like, but I prefer orange. I hope you enjoy the recipe. And I hope you’ll take the time to find out what your loved-ones like to eat. For this recipe you’ll need: (for 5 dozen cookies)

2 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

2 sticks (1 cup) butter or margarine, softened

1 ½ cups granulated sugar

1 large egg

2 cups old-fashioned rolled oats

1 Tablespoon grated orange zest

1 cup raisins

To make this recipe:

Preheat the oven to 400 degrees Fahrenheit.

In a medium-sized bowl, mist together the flour, baking powder, and salt. Set aside.

In a large bowl, beat together the butter and sugar at medium speed until light and fluffy. Next, beat in the egg. Slowly beat in the flour mixture, about ½ cup at a time, until it is well blended. Add the oats and the orange zest and stir in the raisins.

Drop the dough by rounded teaspoonfuls onto prepared baking sheets (sprayed with cooking spray or lined with Silpat), spacing them about two inches apart. Bake in preheated oven for about 10 minutes, until the cookies are golden.

Allow the cookies to cool on baking sheets for a minute or two, and then transfer the cookies to a wire rack to cool. Continue until all the dough is baked.
