Pantry Challenge: Using Allrecipes.com

salt & pepper shakers Brrr. It is absolutely freezing out today here in Pennsylvania. I am definitely not looking forward to taking the babies out for a walk to school to fetch Andrew. The theme of the day will have to be layers. Fortunately, since I am still in my pantry challenge, at least I won’t be going to the grocery store.

Our cereal is running a bit low. I did stock up a couple of months ago when sales and coupons were running hot on all sorts of cereal. The grocery stores were doing plenty of buy 6 get $3 off, which of course I combined with those coupons and sales. My family are big time cereal hogs though. They will eat half the box for a snack!

So this morning I broke down and made a double batch of chocolate chip muffins. It was a good thing, too, as the males in the family were running late and needed something they could take with them as they rushed out of the door. The muffins can also serve as snacks for today or tomorrow.

Lunch was the usual sandwiches and leftovers.

For dinner, I have been trying to brain storm about using up some of my tomato soup stockpile. Sure I could make the soup and some grilled cheese for dinner, but I need to save my bread stock for lunches, if possible. So I came across a recipe at Allrecipes.com. I like using that site for pantry challenges because you can do a search for meals by ingredients. This recipe, for baked macaroni and cheese with tomato soup has a pretty good rating. After reading all of the reviews, I will probably doctor it up a bit. I like the fact that it uses pasta, an inexpensive food that I always have in my stockpile.

For this recipe I will be using up a can of the tomato soup, a box of enriched pasta, some cheddar cheese from the freezer (by the way I keep cheddar and mozzarella cheese in the freezer and add it to recipes without thawing it first. ), some homemade bread crumbs, reconstituted powdered milk, butter, minced garlic and other spices.
