Quick and Easy Gluten Free Pizza

When I first discovered I needed to be on a gluten free diet, one of the hardest things was not doing without cakes or bread or cookies, it was no pizza. Yes, I know there are gluten free flours around but making my own pizza base was all too fiddly.

Pizzas in our house were a quick weekend meal not something that needed a lot of time and effort. We’d been used to using Lebanese bread as a pizza base. Then I found the easy answer. So here’s my solution for gluten free quick and easy pizza.

Ingredients

2 gluten free wraps

2 chili beef skinless and gluten free sausages

Tomato paste enough to cover both wraps

Dried chili flakes

Dried oregano

4 Mushrooms

1 small zucchini

I capsicum red or green or half and half

Grated tasty chesse or mozzarella cheese

HINT

You can substitute salami or chorizo for the sausages. But make sure you check the labels carefully first. Some salamis contain wheat. Others do not. One of the things you become when gluten free – is an expert at reading labels. Never assume. Sometimes a difference in brands can mean the difference between gluten free or not.

Method

Spread tomato paste over each wrap.

Then add chili flakes and oregano. If you’re not fan of chili, simply omit them. I like my pizza with bit of bite.

Cook sausages in a pan sprayed with canola oil spray.

HINT

I cook all 10 sausages in the packet and put what I don’t need in the freezer for the next time I make pizza. This makes it even quicker in preparation next time.I also freeze any unused tomato paste

Cut sausages into slices and scatter over pizza bases. Top with chopped mushroom, diced capsicum and zucchini, or any other toppings you prefer. You might decide to add some diced pineapple at this point.

Sprinkle cheese over. I haven’t put quantities, as a lot will depend on your individual taste.

Cook in hot oven for 12 minutes. Cut into slices and enjoy.
