Quick Breads 1

Quick breads are a delicious way to make something homemade for your friends and family, without spending a ton of time in the kitchen.

I love quick breads, and after trying these recipes, hopefully you will, too. The first is savory and delicious with beans or salad. The second is delicious any time of day as an appetizer or dessert.

Sour Cream Corn Bread

For this recipe you’ll need:

2 TB butter, melted
1 egg
¼ cup yellow corn meal
¼ cup sugar
½ tsp. baking soda
1 cup sour cream
¼ cup milk
1 cup all purpose flour
2 tsp. baking powder
½ tsp. salt

To Make:

Grease a 9-inch square pan. Melt butter. Combine sour cream and milk in a medium-sized bowl. Add egg and butter. Stir mixture until well combined. Add the rest of the ingredients and stir until just moistened and the mixture is smooth. Spread in pan. Bake at 375 degrees about 25 minutes or until light brown.

Carrot Bread:

For this recipe you’ll need:

2 cups sugar
4 eggs
1 ½ cups vegetable oil
3 cups flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 cups grated carrots
½ cup chopped walnuts

To Make:

Mix all ingredients together and pour into an ungreased bundt pan or angel tin. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Ice with powdered sugar icing.
