Quick Tips for Quick Lunches

In the rush of the mornings, making lunches is the last thing you should be worried about. So how can you save time without sending your kids to school with soggy sandwiches?

After a year or so of listening to my kids complain about soggy PB& Js, my husband (of all people) taught me the proper way to make a peanut butter and jelly sandwich the night before so that it won’t get soggy at school. I know this is pretty basic, but I consider myself a pretty organized, informed mom, and for me not to know this already…well…I thought maybe there were some of you out there that could benefit from this really basic piece of advice.

So, here it is (drum roll, please):

When making a PB&J sandwich, put peanut butter on both sides of the bread and put the jelly in the middle. The peanut butter acts as a wall between the bread and the jelly, thus not allowing the jelly to make the bread soggy.

Now, if that wasn’t good enough, here’s another good tip from my friend, Mary Charles of Murrieta, Ca:

Mary buys a loaf of bread and uses it to make up several peanut butter and jelly sandwiches. Once she’s done, she cuts them up, puts them in plastic bags and freezes them. Each morning, she grabs a sandwich, sticks it in the lunch bag and it defrosts by lunchtime. Ingenious!

I also make my baby’s lunch when I make my older kids theirs. In doing so, it frees me up at lunchtime, when she’s hungry and cranky, and I don’t have to make lunches more than once. I opt to make lunches the night before because it saves so much time.
