Smoked Sausage in a sauce

With Christmas over now, my family is already tired of the usual left overs and wanted something different. So, I decided to totally change things and make a smoked sausage dish. This dish takes a while to make, but it is worth it. I always make extra so I can have some the next day on a bun. It is really good and filling. It’s the perfect thing to fix when you are expecting company over because there is so many ways to serve this dish. Experiment and see which way you would like to serve it.

You will need:

1/4 Cup oil

2 pounds of Polish Sausage

1 red bell pepper, chopped

2 yellow onions, sliced

1 teaspoon salt

1 teaspoon ground pepper

1/2 teaspoon dried Oregano

1/2 Cups chopped parsley flakes

4 cloves garlic, chopped

2 Tablespoons tomato paste

1/4 teaspoon red pepper flakes, if desired

1 can diced tomato

Here is what you do:

Heat the oil in your skillet until it is starting to bubble over medium heat. Add the sausage and cook until it is barely brown then remove from the heat, about 7 to 10 minutes. Then add peppers, onions, salt and pepper to the skillet, leaving it on medium heat. Cook until the onions are tender. Add the oregano, parsley flakes and garlic and cook about three minutes. Add the tomato paste and stir all together until the paste is smooth. Add the diced tomatoes and red pepper flakes. Stir all together. Simmer. Meanwhile, cut your sausages into bite size chunks and add them into the mixture. Simmer for an additional 15 minutes. Let stand. The sauce will thicken. It’s ready to serve.

Suggestions:
Serve this on heated buns or in a bowl

Corn on the cob, baked potato, Tossed salad, French bread, Sub rolls, Kaiser buns
