Something to Do with Pancake Batter (Besides Pancakes)

It so happens that I lucked out with getting some pancake mix for practically nothing. There I was in the store, checking the clearance food cart during my normal shopping trip when I spotted several boxes of dry pancake mix. There was nothing wrong with the mix, with the exception of the fact that the boxes were all dented on the corners. This meant that the store slashed the pricing in order to sell the product, since no one will pick up a dented box of pancake mix and expect to pay full price, apparently.

Normally, I mix up my own pancakes from scratch, but the deal on these ready made mixes couldn’t be beat. So, this morning, I made the triple batch (which barely feeds my crew) adding some extra ingredients made to order, such as a few mint chocolate candies for my eldest son and we feasted.

Unfortunately, my family has gotten much too use to pancakes from scratch, made with organic flour, wheat flour, raw sugar and flax seed (as well as the milk, oil and eggs) that puff up quite nicely, that they turned their noses up a bit at the rather flat and somewhat tasteless made from a mix version. (I’m sure those who are used to a mix might turn their noses equally high at our homemade version.)

So, here I am with lots of mix and no takers. With a little creativity though, I’m going to try out some new uses for the stuff that just might go over better when the creations are not in pancake form.

For example, since the batter comes out pretty thin when made to the directions on the box, I may take advantage of this to turn the batter into funnel cake. I’ll fill a zippered baggie with batter and snip off one end of it. Then the batter can be squirted into a shallow pan of oil to cool as a funnel cake. Once brown, sugar and or cinnamon will complete the treat (or maybe perhaps some chocolate syrup).
