Strawberry Lime Pie
Beautiful color and great taste!
INGREDIENTS:
1 count pastry pie shell, cooked
2 packets unflavored gelatin
6 oz frozen limeade concentrate
1/3 cup sugar
1 tsp grated lime rind
1 cup diced strawberries
1 cup whipping cream, whipped
1 dash green food coloring
DIRECTIONS:
1. Bake pie shell. Soften gelatin in 1/2 cup cold water.
2. Combine limeade concentrate, sugar, and 3/4 cold water in small saucepan; cook over low heat, stirring constantly, until concentrates melts and sugar dissolves.
3. Add gelatin; stir until dissolved. Chill until syrupy. Stir in lime rind and strawberries.
4. Fold in whipped cream until blended; tint pale green with food coloring.
5. Chill until mixture mounds when dropped from a spoon. place in pie shell; chill 2-3 hours until firm.
Prep: 15 minutes
Cook: 10 minutes
