Summer Grilling Fun

The intoxicating aroma, the mouthwatering flavors and the dancing flames of an outdoor cookout; is there anything more fun than firing up the grill on a summer weekend?

I know. Having Bobby Flay do the grilling for you.

Okay, maybe’s that just my idea of fun.

Whether you are grilling and chilling for Pops on Father’s Day or you’re celebrating graduation day with family and friends, the following simple recipes are sure to bring a smile to your face:

CITRUS SHRIMP SKEWERS

Ingredients:

1/2 cup freshly squeezed lime juice

1/2 cup freshly squeezed lemon juice

1/4 cup freshly chopped cilantro

3 cloves garlic, chopped

2 tablespoons olive oil

Salt and pepper

1 1/2 pounds raw shrimp, peeled

Lemon and lime wedges

Directions:

Whisk together first five ingredients.

Season with a little salt and pepper.

Pour mixture over shrimp and let marinade in the fridge for 30 minutes.

Soak wooden skewers in water.

Place shrimp on skewers and grill for 2 to 3 minutes on each side or until shrimp turns pink.

Serve with lemon and lime wedges.

GRILLED APPLE SUNDAE

Ingredients:

Five Granny Smith apples, cored and cut into quarters

1/2 cup brown sugar

1 teaspoon cinnamon

1 lemon

Directions:

Place apple quarters in a Ziploc bag.

Squeeze lemon over apples.

Add in brown sugar and cinnamon.

Seal bag and refrigerate for about 4 hours.

Place apples on the grill for about 10 minutes until they warm and get golden brown.

Remove apples from grill and place in a bowl.

Top with your favorite ice cream, caramel sauce and some fresh whipped cream.

Serve immediately.

GRILLED PEACH COBBLER

Ingredients:

6 fresh peaches, sliced

1 box moist white cake mix

8 tablespoons of butter

1 tablespoon of cinnamon

Directions:

Slightly grill peaches, just to get grill marks on them.

Add peaches to the bottom of an 8 1/2 x 11-inch aluminum pan.

Top peaches with dry cake mix.

Add butter and sprinkle with cinnamon.

Place pan on grill for about an hour.

Remove pan from heat and serve grilled peach cobbler with ice cream or fresh whipped cream.
