Sweet Reward

“I love you, Mommy!”

Those four little words–comfort food for the ears.

Now that school’s back in session, I don’t hear them nearly as much any more.

In fact, for more than seven hours a day I don’t hear a single syllable from my second grader.

I’m at work, she’s at school, and the house is eerily quiet compared to the height of the summer when my daughter’s voice filled the rooms and often spilled out onto the sidewalk.

Less than two weeks into September and we’re back to the academic year routine: Prep uniform, pack lunch, make breakfast, drag kid out of bed, cajole kid to eat breakfast, rush out of house, drop-off kid, pick-up kid, nag kid to do homework, make dinner, drag kid into shower, nag kid about going to bed, wash, rinse, repeat.

To break the monotony and celebrate surviving the first full week of school I decided to indulge my daughter’s sweet tooth. Yesterday, we got dinner delivered and used the extra time to whip up my little munchkin’s favorite dessert:

S’more Cake

Ingredients:

1 package yellow cake mix, plus ingredients to prepare mix as directed on the box

1 cup chocolate chunks, divided

2 1/2 cups Teddy Grahams, divided

1 1/2 cups mini marshmallows

Directions:

Preheat oven to 350 degrees.

Grease 13-by-9-inch baking pan.

Prepare cake mix according to package directions, adding 1/2 cup chocolate chunks and 1 cup of Teddy Grahams.

Spread batter in prepared pan.

Bake 30 minutes.

Remove cake from oven; sprinkle with remaining 1/2 cup chocolate chunks and marshmallows.

Arrange remaining 1-1/2 cups Teddy Grahams over top.

Return cake to oven; bake 8 minutes or until marshmallows are golden brown.

Cool completely before cutting.

Bake night was a success. My daughter and I had the chance to chat, laugh and snuggle. The best part: hearing “I love you, Mommy!” while we stirred, poured and sprinkled.

There’s nothing sweeter than having your cake and eating it too.
