Thanksgiving Turkey Roll

Okay, admittedly, it is not even close to Thanksgiving yet and I am already thinking about leftover recipes! This would be great for leftovers or for a small Thanksgiving type meal if there are only a few people for dinner.

For this recipe, you will need four slices of turkey break meat, flour, butter, chicken broth, shallots, garlic cloves, mild pork sausage, dry sage, dry red pepper flakes, dry thyme, day old bread, salt, and pepper.

To prep for this recipe, you will need to mince one large shallot and one garlic clove. Crush enough dry sage, dry red pepper flakes, and dry thyme to make 1/4 teaspoon each.

To make the stuffing, heat one tablespoon of butter in a skillet over low heat. Add the minced shallot and garlic clove. Let this saute for about 5 minutes. Add 1/4 pound of mild pork sausage. Break it up and cook until brown. Add 1/4 teaspoon each of crushed dry sage, crushed dry red pepper flakes, and crushed dry thyme. Crumble up two slices of the day old bread into the skillet and stir. Let this simmer over low heat for 5 minutes. Season the mixture with salt and pepper as desired.

Place the four slices of turkey in between two sheets of wax paper. Pound them until they are about 1/4 to 1/6 inch in thickness. Take one slice and put 1/4 of the stuffing in the center. Carefully roll up the slice of turkey. Close it with wooden toothpicks. Repeat until all the slices are filled and rolled.

Place 3 tablespoons of flour on a plate. Dust each turkey roll lightly with flour. Melt one tablespoon of butter in a skillet. Add the four turkey rolls to the skillet and let cook for about 5 minutes or until brown on each side (remember to roll it so each side browns).

Remove the turkey and add one cup of chicken broth to the skillet you just used. Scrap up any brown pieces off the bottom. Return the turkey rolls to the skillet and cook them over low heat for 10 minutes. If you like, you can serve canned gravy over this.
