Two Different Kinds of Salad Recipes

!saladWhen I was growing up we had salad every night for dinner. Lettuce, tomatoes and cucumbers. Now salads with more pizazz are easy to serve at home and are still great because they require little prep time. These are easy to do as well so you can make them at home for dinner or to entertain guests!

Boston Salad with Avocado and Lime Dressing

You will need:

2 medium heads of Boston lettuce

1 ripe avocado, pitted

1 bunch of scallions, very thinly sliced

1 bunch of fresh cilantro, chopped

For the dressing:

2 limes juiced

1/3 cup extra virgin olive oil

1/2 teaspoon of salt

1 teaspoon of sugar

a little black pepper to taste

1 tablespoon of whole grain mustard

Directions:

Pull the lettuce leaves from the head and rinse gently under cold water, and lay on a clean towel to dry. Use a spoon to remove the flesh in 1 piece from each half of the avocado. Thinly slice the avocado flesh into thin wedges.

Whisk together all the dressing ingredients.

Arrange the lettuce leaves on a plate and top with the avocado wedges, scallion, and cilantro. Finish with a healthy drizzling of the dressing.

Fresh Corn Tomato Salad–Another delicious different salad to try!

You will need:

3 tablespoons white wine vinegar

2 teaspoons salt

freshly ground black pepper

1/4 cup virgin olive oil

6 ears of fresh corn

2 cups of grape tomatoes, halved

1 bunch of scallions, thinly sliced

8 ounces of fresh mozzarella

1 1/2 cups of fresh basil leaves

Directions:

Whisk the vinegar, salt, and pepper into a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.

Shear off the corn kernels with a sharp knife over a bowl. Toss in the tomatoes scallions, and mozzarella. Pour the vinaigrette over the salad and toss to coat. Cover and let set for 15 minutes or up to 2 hours. Before serving tear the basil over the salad and stir.
