Two Quick Party Recipes

Do you need something quick and easy for a New Year’s Eve Party? These two recipes are simple and quick to whip up and of course gluten free. My husband loves this quiche I make.

Dale’s Quick and Easy Quiche

Ingredients

3 ounces bacon

8 eggs.

Half red capsicum

Half green capsicum

1 cup milk

1 cup grated tasty cheese

I teaspoon sweet paprika

Method

Lightly cook bacon in a fry pan. Do not overcook. Cut into small pieces.

Grease a Pyrex pie plate with margarine.

Preheat oven

Put cooked bacon on the bottom of the pie plate. Add diced capsicum.

Beat egg and milk together. Pour over bacon and capsicum

Add grated cheese.

Top with a teaspoonful sweet paprika sprinkled over.

Cook in hot oven till mixture rises – about ten minutes. Then turn down to moderate and cook for further twenty or till nicely golden brown on top. Keep a good eye on it, as the paprika can cause it to burn if you’re not careful but it adds so much to the flavor. Mick always claims no one’s quiche ever tastes as good as mine. The paprika is the secret.

This quiche is equally as good served hot or cold. We often take it on a picnic or to the footy.

This is the basic recipe I use. You can also add tomato, mushrooms, zucchini, corn Spanish onion, shallots or any other vegetables you like. My quiche often depends a lot on what I have in the vegetable crisper of the fridge.

Quick and Easy Spicy Dip

Ingredients

4 ounces cream cheese

1 tablespoon gluten free Worcestershire sauce

1 onion finely diced

1 tablespoon gluten free tomato sauce

1 tablespoon gluten free sweet chutney

Half teaspoon sweet paprika

Method

Mix all ingredients together. Mix well. Chill and serve with rice crackers or carrot sticks.Too easy!
