Watermelon Chiffon Pie
Yes, watermelon pie!
INGREDIENTS:
2 cup watermelon, pureed
1/2 cup powdered sugar
2 tbs gelatin
1/4 cup water, cold
1/2 cup water, boiling
1 tbs lemon juice
2 large egg white, stiffly beaten
1 cup whipping cream, whipped
1 count graham cracker crust
DIRECTIONS:
1. Puree watermelon to measure 2 cups. Add powdered sugar. Set aside. Soften unflavored gelatin in cold water.
2. Add boiling water; stir to dissolve. Add lemon juice and pureed watermelon.
3. Refrigerate until mixture begins to thicken. Fold in egg whites and whipped topping.
4. Pour into pie shell and refrigerate until firm.
