What is a Potluck Dinner?

I know you have heard of or even attended a Potluck Dinner. Potluck Dinners are simply defined as a dinner where everyone who attends brings a prepared dish to share with everyone. Having a potluck dinner is a less expensive way to have a gathering because everyone shares in the expense. Organizations, churches and benefit fund-raisers usually have Potluck Dinners to help raise money. The word Potluck dates back to the sixteenth century and is still being used today.

The most popular dishes brought to a potluck dinner are casseroles, any side dishes; such as vegetables, breads or desserts. Anything and everything can be brought to a potluck dinner; there are no rules, except make sure to prepare enough food to fill everyone. If you have ever prepared a dish, you may wonder if you have prepared enough or you worry if anyone will like your dish.

If you are invited to a potluck dinner this year, I recommend these two recipes that is large enough to serve several people and it will taste great. I have prepared them and they are always a hit, no matter what the main course is.

Recipe #1:
Creamy Potatoes & Cheese

What you need:

1/2 pound of bacon, fried and chopped

2 pounds of frozen hash browns

1 stick of butter

1 cup of cottage cheese

1/2 pound of Velveeta cheese

1 medium onion, chopped

1 pint of half and half

What you need to do:

Preheat oven to 350 degrees

Bring your half and half to a scalding boil. Layer everything in a casserole dish starting with your hash browns. Top with chopped bacon. Bake in the oven for one hour.

Recipe #2:
This recipe is inexpensive, but it taste expensive.
Quick and Easy Mexican Cornbread

What you need:

3 Boxes of Jiffy Cornmeal mix

1 can cream of corn

3 eggs, beaten

1/4 Cup milk

1 package of Taco blend shredded cheese

What to do:

Preheat oven to 350 degrees. Grease a cake pan. Mix all ingredients together until moist. Add to cake pan and bake for 20 minutes or until a toothpick inserted in the middle comes out clean.
