What To Do With Half a Can of Pumpkin

Either the people at Libby’s pumpkin are not so truly bright or they’re very genius. I haven’t decided which yet. Maybe you can help me decide.

Yesterday, I made several sweet potato and pumpkin pies and other various desserts. Our church has an annual Thanksgiving dessert where we all get together and eat pie, and for the last several years, I’ve made something. I generally don’t do pumpkin because as we’ve noted, I don’t like pumpkin pie. But this year, that’s what was requested, so that’s what I did.

I didn’t make plain pumpkin pie but rather things like Spiced Pumpkin Pie with a gingersnap crust. All of them Libby’s recipes and invariably every single one calling for less than one full can of pumpkin. Not half of a can either. . .because then you could just make a double recipe. No, every single one of my recipes called for an obnoxious ¾ cup or 1 ½ cups or something than inevitably left me with an opened can of pumpkin begging to be used up. But there was never enough to make a whole other recipe, which led to another open can. . .and by the time I was finished I had no less than seven pies and 1/2 cup left of the Libby’s pumpkin. So after much searching, here is what I’m going to do with my 1/2 cup of pumpkin:

Healthy Pumpkin Brownies

½ cup of Libby’s pumpkin (and watch, I’ll have something like 3/8 of a cup)

1/3 cup brown sugar blend (like Splenda)

1 large egg

2 large egg whites

2 tbsp oil

1 cup flour

1 tsp baking powder

1 tsp baking cocoa

1/2 tsp cinnamon

1/2 tsp allspice

1/4 tsp nutmeg

1/3 cup semi-sweet chocolate mini morsels

Directions

Preheat oven to 350° F. Spray 8- or 9-inch-square baking pan with nonstick cooking spray.

Combine pumpkin, sugar blend, egg, egg whites and oil in large mixer bowl. Beat with an electric mixer on medium speed until blended. Add flour, baking powder, cocoa, cinnamon, allspice, salt and nutmeg. Beat on low speed until batter is smooth. Stir in morsels. Spread evenly into prepared pan.

Bake for 25 to 30 minutes or until wooden pick inserted near center comes out clean. Cool in pan on wire rack. Cut into 2-inch squares.
