Wild Rice Soup
Good, simple soup.
INGREDIENTS:
6 tbs unsalted butter
1 tbs onion, minced
1/2 cup flour
3 cup chicken broth
2 cup wild rice, cooked
1 cup cooked ham, minced
1/2 cup carrots, grated
1/4 cup almonds, slivered
1/2 tsp salt
1 cup half and half
2 tbs dry sherry
1 pinch pepper
DIRECTIONS:
1. Melt butter in saucepan, saute onions until tender. Blend in flour, gradually add broth.
2. Cook stirring constantly until mixture thickens slightly.
3. Stir in rice, ham, carrots, almonds, and salt; simmer about 5 minutes.
4. Blend in half and half and sherry; heat to serving temperature and season with pepper.
Prep: 5 minutes
Cook: 25 minutes
