Yummy Butterscotch Chip Cookies

My husband baked us some cookies last night. The fact that he wanted to make home-made cookies was a shock to me, but he wanted those cookies so badly that we made an impromptu shop at the grocery store just to get butterscotch chips. He used a good Chocolate Chip Cookie recipe, but instead of using the chocolate chips, he used butterscotch chips. And boy are those cookies good!

The Chocolate Chip Cookie recipe in itself is a winner. Now with the butterscotch chips it’s a whole other cookie recipe that’s equally as good. I know you will love it if you (or your husband) decide to bake up these treats. Here’s how to make ’em:

Ingredients:

  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 cup stick butter, softened
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 package (12 ounces) butterscotch chips (2 cups)

Directions:

  • Heat oven to 375 degrees F.
  • Mix sugars, butter and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in butterscotch chips.
  • Drop dough by rounded tablespoons about 2 inches apart onto ungreased cookie sheet.
  • Bake 8 – 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.

This recipe makes roughly 4 dozen cookies, of course depending upon how big or how small you make them. My husband made 38 cookies, if that helps you at all.

I gave some of them to my hair stylist this afternoon, who raved about them. And I will be giving some to one of my neighbors, who let us borrow some flour last night around 8 (yes although we made a trip to the grocery store prior to baking, we failed to realize we were nearly out of flour). Hey, what are neighbors for?
